Let's see. I've been a lot of places in the world and still have a hard time answering this question. But some of my criteria would be:
1) English speaking
2) not too crowded
3) lots of nature nearby and accessible
4) Doesn't get too hot or too cold
5) Reasonably safe
6) good logistics so I can get everything I need
7) has forests and beaches and mountains
So I guess the north part of the south island of new Zealand, parts of Oregon \ california, or southern scottish coast (maybe island of Arran) could all fit that bill. But I'm probably staying right here for things like work, family, ease of caring for dog who doesn't like other people or dogs, etc.

For number six you probably want to live in a small town that is close to a large city. Best of both worlds. I recommend a small town that is close to Jackson or nashville. Much better than memphis.
