I have heard so often that God spoke only to Israel, didn't mean for the gentiles to listen in at all.
When and where has anyone suggested that God "didn't mean for the gentiles to listen in at all"? I think you made that up.

Yet my concordance tells me the KJV has 117 verses about the stranger among them and 7 verses about the sojourner. I printed all these verses, and almost every one said that what the Lord told Israel was also for the stranger or the sojourner. To me that tells me that God includes instructions to us all, not just Israel, but others do not see that in these scriptures. I am not understanding why?
You aren't understanding why because you cling to the idea that the Old Covenant was given to all humankind, when plainly, it was given specifically to Israel. The very few sojourners and strangers who wanted to join with Israel were required to abide by the Law as given to Israel. In the same way, if someone wants to immigrate to the United States, that person must abide by the laws of the United States. However, that person is not bound by the laws of the United States prior to emigrating there. The rest of humanity was not given the Law... period.

You don't have to post it twice. Your just missing my point. The differences being made here is that 10 commandments are not part of the law of Moses the law of Moses was added to the 10 commanments. They were for all man kind. including the sabbath.
God gave the Ten Commandments to Israel through Moses. They are part of the Law of Moses give to Israel. God didn't give the 10 C's to Egypt, nor to Greece, nor to any other nation.

Bible says "If" love me keep my commandments. not out of justification but out of Love.
So, "out of love" you keep the 'commandment' to sacrifice animals on the Sabbath? To live in a booth for a week? To attend the Temple three times a year? To have your house inspected by a Levite if you find mould in your bathroom tile grout?

You seem to forget that the Sabbath was made at creation. This is way it says remember to the Jews.

Gen 2 is before sin. No need for a commandment until they forgot. I.e Jews at Sinai

The Sabbath was not given as a commandment at creation, but at Sinai.

You're going in circles. The ten commandments are part of the Law of Moses. Try as you might, there is no way to escape that reality.

only if you see the sabbath as a burden. It’s a blessing if done out of love. Sabbath was made for man.

Wrong. You have to find a way to extricate the commandment regarding the Sabbath from the Law of Moses before your argument would have any merit. Good luck with that.
