When and where has anyone suggested that God "didn't mean for the gentiles to listen in at all"? I think you made that up.
You aren't understanding why because you cling to the idea that the Old Covenant was given to all humankind, when plainly, it was given specifically to Israel. The very few sojourners and strangers who wanted to join with Israel were required to abide by the Law as given to Israel. In the same way, if someone wants to immigrate to the United States, that person must abide by the laws of the United States. However, that person is not bound by the laws of the United States prior to emigrating there. The rest of humanity was not given the Law... period.
God gave the Ten Commandments to Israel through Moses. They are part of the Law of Moses give to Israel. God didn't give the 10 C's to Egypt, nor to Greece, nor to any other nation.
So, "out of love" you keep the 'commandment' to sacrifice animals on the Sabbath? To live in a booth for a week? To attend the Temple three times a year? To have your house inspected by a Levite if you find mould in your bathroom tile grout?
You seem to forget that the Sabbath was made at creation. This is way it says remember to the Jews.
You're going in circles. The ten commandments are part of the Law of Moses. Try as you might, there is no way to escape that reality.

Wrong. You have to find a way to extricate the commandment regarding the Sabbath from the Law of Moses before your argument would have any merit. Good luck with that.
