You have to be a badass to eat anything from a bog.
I used to be of the chewy crowd until recently. My daughter gift me a tin of shortbread cookies (ugh) and, since it was from my daughter, I felt I had to at least partake of at least one. And then I ate them all and then took my brother's tin also, before he noticed how good they were. They are sort of the best of both, crispy yet melt in your mouth that there really seems to be no need for chewing. And now, I wonder if this is also true of the sponge ladyfingers, which the English call "biscuits." Supposedly, these are crispy on the outside and spongey on the inside. At any rate, I now have use for my cookie press, also known as my badass "dough gun."
