Carnitas seasoned boneless pork shoulder roast and baked eggplant fries...
My wife made an eggplant rice casserole last week. It tasted OK but lacked texture. Those eggplant fries are an intriguing idea though. Might give those a try while eggplant is still in season. You appear to be quite handy in the kitchen. Definite plus for sure. Love all pork dishes too. Stuffed seasoned chops are my fave.

I love fried eggplant myself, never really thought of cutting them into long pieces. We usually just cut them into circles and season them with garlic salt.

I use salt and pepper on quarter inch slices. I let the slices set in fridge for an hour or so. Then coat them with extra fine corn meal. Then drop slices into a hot skillet coated with grease (usually lard).
 
I needed a few things from Hellmart and placed an order. I decided I might as well get something for lunch from the deli while I was at it. I ordered a bbq sandwich, but what I received was a bag of frozen Impossible burgers. What were they thinking? I put them in the freezer. Not being one to waste food, I decided to try them. They aren't too bad. I plan to eat the rest of them. But, of course, they don't taste like beef! That's "Impossible!" 😂

I've had a few meatless burgers, and they weren't bad...

But I remember one fast food place used to have one -- that had even more calories than their regular burger. :oops:

So in that case, I'm gonna choose poor unfortunate cow instead.

And... Are those "Tater Skins" chips??!!!

I haven't had those in years!!! (If I'm going to have something greasy and crunchy, I usually choose Lays Original chips... But I used to like Tater Skins back in the day!!)

I actually meant to mention the calories, thank you for bringing that up. The calories are surprisingly as much or more than a beef burger. Also, they cost more. They didn't charge me for the bag of them. They simply gave me them instead of the bbq sandwich from the deli. When I looked them up to see how much they are, they run about $14!

And yes, those are potato skin chips. TGIFriday's cheddar bacon to be exact. A store nearby carries them for a $1 a bag, so once in a while I get a bag to have for sides like this. I'm not a big chip person, but I like some potato skins once in a while. I like TGIFriday's onion rings even better. I personally like them better than Funyuns, but they are almost always out of stock.

My friend was over few days ago, so yellowfoot-bacon-cheese pie was a perfect for dinner.. I could eat maaany slices of this, little selfcontrol practice...
Still have it in my fridge, but today I decided to raid my neighbours fridge instead, so maybe I can have a slice as a dessert? :LOL:

I haven't been to Arby's in a good while. I was one of those people who avoided going there after they got rid of the potato cakes. And I just haven't gotten around to having Arby's since they've put them back on their menu. Anyway, I decided to try the steak bites I keep hearing about, but mainly I wanted potato cakes...
