Clearly, Gentiles are not required to keep the OT law. There were a few rules to follow, but that is entirely different than keeping all the law.

Nope. God has jurisdiction in all things by virtue of creation. Jesus has all jurisdiction by virtue of the new creation.
The reason that the law has no jurisdiction is because dead people aren't subject to the law. I've never seen a ticket given or a warrant served in a cemetery.
