How can an omniscient God, who knows all things, create a creature with free will to love God?
By virtue of creation. He knows intimately how He created every atom. He knows how they are all put together and how each will respond under every circumstance.
But my question was really...what is difficult for God?

The bible says why God created Adam and Eve and all living things on the earth. He done it for he's pleasure. It's written in there. I remember seeing it. If not, I don't know why, but I remember reading that in the bible.

The only thing difficult for Him is for us to learn to grasp what He did easily.

THAT is the real question.

Nothing is hard for God.
How He could do it was revealed in Jesus Christ.

Who (Christ), though He eternally existed in the essence of God,
He did not think equalities (plural) with God
a gain to be seized (means to violently take})
and held (so that the Father's plan would not be neutralized).
Rather, he made himself nothing
by taking the very nature of a servant,
being made in human likeness.
And being found in appearance as a man,
he humbled himself
by becoming obedient to death—
Even death on a cross! Philippians 2:6-8

Jesus in His earthly state became without the omniscience he had known as the Lord God of Israel before his coming down from Heaven.

In that state that the Son willed to be, God put forth His Son, and had Jesus in that state, create everything he wanted to be created. All without having to know how we would choose.

More to be known.....

Why did God create Human kind.?

When i first heard of God / Jesus in a Youth Group they taught God created humankind as he wanted fellowship with a species that had free will

I of course read the bible and it soon became apparent that the Angels that God created first already had free will. eg Lucifer chose to disobey.

So why?

I still not sure why , so happy to hear peoples thoughts.
“Why did God create Human kind.?”

God that made the world and all things therein, seeing that he is Lord of heaven and earth, dwelleth not in temples made with hands; ….and hath made of one blood all nations of men for to dwell on all the face of the earth, and hath determined the times before appointed, and the bounds of their habitation; that they should seek the Lord, if haply they might feel after him, and find him, though he be not far from every one of us: for in him we live, and move, and have our being; as certain also of your own poets have said, For we are also his offspring.”
‭‭Acts‬ ‭17:24, 26-28‬ ‭

The Bible's God is an eternal being. He had no one suitable for fellowship in
the dateless past, like say a trillion years before the angels and a trillion
year before mankind?
_
Maybe God created man because he had love in his heart but no one to share it with?

The Bible's God is an eternal being. It's difficult for me to believe He had no
one suitable for fellowship in the dateless past; like say a trillion years
before the angels and a trillion years before mankind.
