Just before Christ died, He said “It is finished” (John 19:28-30). What does the word “It” refer to - what was finished?

John 19:28-30 After this, knowing that everything had now been accomplished, and to fulfill

He had finished what He came here to do. He came primarily to fulfill the requirement of a perfect sacrifice for payment-in-full of man's sin. That is what makes it freely available to all today.
It is the the work the Father had given Him to do...He had fulfilled all righteousness and satisfied God's wrath.
To the OP, His personal mission. Fuilfillment of the prophecies of it.
He didn't say the word "it" in any language. He only said one word, τελέω teleō which means finished and then he died so he was talking about his life being over, that he would die and then he did.

If that’s all He meant, then He wasted the little breath He still had. I believe He was declaring that the work His Father assigned Him was completed: the work of fulfilling the Law, defeating the devil, overcoming death, and opening the way of salvation for all humanity.
In Biblical Hebrew, there are no separation of words. What appears to be one word, like names, can be translated an entire phrae
Salvation. He became the Sacrifice [[necessary]] to appease God's view towards sinful man.
obviously, from here, He, finished the process of not just dying, but Resurrecting, so we will also Resurrect ...+... He conquered Death and the Grave and holds the "keys."

his suffering was concluded when his body died with the offer of hyssop and vinegar wine it had concluded the last scripture pertaining to his suffering it was finished he had overcome the world even to the point of suffering and death he never sinned through all of it

He did all He could do through His last breath. He was fully obedient to the law in suffering a violent assault on His Person and body and being. The evil forces thought they had Him where they wanted Him and would be victorious over Him by killing Him.
The Father turned His apparent defeat into glorious victory over death by raising Him to Life again as was promised to Him in the Law for His obedience in giving His Life to save us. The Father's righteous judgments were demonstrated to all of creation through what His Son accomplished by His obedience and faith as a Man.

When Jesus said, "It is finished," He was quoting from the final verse of Psalm 22, where the Greek word "finished" is the same as the Hebrew word "done." This verse implies that Jesus kept His head erect, until He laid down His life, as stated in John 10:18.

In order for the Son to complete His mission and purpose and assignment in obedience to His Father's commandments, He had to die. He is the Lamb slain from the foundation of the world.
At the precise moment of His death and His last breath, He had fully obeyed the Law and fulfilled the Law. Then it was up to His Father to keep His promise/commandment to the Son that He would live and be raised to life again.
The Son had completed His obedience and given His full measure of devotion when He died in obedience to the Law and His Father in love for His Father and His neighbors who could not save themselves.
Finished, completed, fulfilled, accomplished, paid, performed, died, done. His part was complete. Then His prayers to be raised because of His obedience, as recorded in the Psalms were answered by His Father according to the promise of life in the Law to Him for doing it.

His work upon earth, as given to Him by His Father was complete. John 4v34, 17v4...
After His death, He (His soul) descended into Hades (Abyss). Acts 2v22-31, Rom 10v7
