We are to labor for six days and rest on the 7th day Sabbath.

No one is assuming that Sabbath observance began in Exodus. It is the first mention of God instructing people to observe the seventh day rest, found in Exodus. The same goes for the rest of the law.
Gentiles were never under the law and that is a fact.
"Is he the God of the Jews only? is he not also of the Gentles..." (Rom 3:29)
