Beef (chuck, brisket, and all sirloin) starts at $5/lb here. ($11/kg) it only goes up from brisket, which is about half fat...and I need lean meat. Which means probably around $7/lb.
So each pie can only have 1/16th of a pound of meat in it...and still sell for $6-7 ea....that doesn't sound spectacular now does it? Ugghhhh...
Maybe if I upped the size and meat but go $8-10?

As I've been putting together the business plan I keep surprising myself by nailing the complicated numbers with a guess. I've been out of the kitchens for 20 years...but I can still get them right with a guess? Shocking myself to no end.

My friend from England recently corrected me. I thought my mom loved shepherd's pie, but that's made with lamb. Since I make it with beef, it's cottage pie. The rest of the world eats pot pies that you can hold in your hand. They go by various names in different countries. But essentially they are a much more nutritious version of a hot pocket. They have real meat and veggies and sometimes cheese...not a lot of gravy in them...but lots of real meat.
I just did the costing on them...
It was extremely pricey to make which means that it's even more expensive to sell. Really lean beef is running around $8/lb at the moment. Pie dough made with butter is around $2/lb...
Food is outrageous currently. Probably not going to get cheaper either. Never has in the past.
