However we have many more types of cheese. We have hundreds of varieties, and each with its own regional characteristics. The one with the holes is called Emmentaler. I can't tell if they are cut out by a machine or made naturally during the cheese making process, but people would not buy any cheese that is labeled Swiss if it did not have holes. I don't know much about cheese making, but I'm pretty sure they didn't ship Canadian milk all the way over to switzerland, make the cheese, then ship it back to canada.But that's not authentic, it's simply wrong!Here, it would probably lead to a legal dispute if a cheese manufacturer would made holes in its non-Emmentaler cheese.
But the whole thing reminds me of my visit to Canada. Swiss cheese everywhere, but when I looked more closely at the packaging...

Sure, but definitely not in this case!That’s not uncommon, generally speaking. If you can squeeze an extra cent per pound in those massive amounts of cheese, it pays off sending ingredients halfway across the world and back. I’m not smart enough to find a better way myself.

The very nice and kind family I stayed with during my trip explained to me that “Swiss cheese” is not legally protected in Canada and is therefore often used as a “seal of quality” to convey high quality.

I must have missed that post. It's an absolute wonder what that peanut butter machine can do to whole peanuts. And the other nuts are great "buttered up" like that too. One particularly useful friend who loved to eat with my family would spend 20 minutes getting the next store-bought jar ready, something I never took the time to do. We still tend to pour off the oil and just deal with the peanut butter getting stiffer as we got to the bottom of the jar.I am very disappointed in the quality of the culinary education in this chat… That only I voted for natural peanut butter ....like in Texas with all the oil at the top.
