So I watch my 2 year old boy for 2 hours M-F before my wife gets home from work, so I was thinking, if I could find some nice quick recipes, not too complicated and definitely tasty, I could prepare them and we could all eat together as soon as my wife gets home. So I figured I would ask my CC family from all over the world for ideas. Remember, I'm not a chef, and our son loves to help out in the kitchen but not for long (you know kids
). So please share some of your favorite recipes, I'll try to prepare them so long as I can find the ingredients around here. Thanks, God bless you!
The secret to finding super easy recipes is to find kid's cookbooks- either at the library or online, Pinterest would be a good place. These are great for beginners or for those who don't have much time or much ingredients. I'll give you one right now that is as easy as pie...
Chicken Pot Pie
1 small package of fresh boneless skinless chicken breasts or strips
1 small bag of frozen mixed veggies (corn, carrots, peas, green beans)
1 potato
1 small can Campbell cream of chicken soup
A little milk
1 Pillsbury pie crust
Preheat oven according to pie crust instructions. You want to cook the bottom crust half way before adding filling. Set aside.
Fry chicken in pan with butter over medium to medium high heat- you want a golden crust but the middle cooked thoroughly. Cook until meat thermometer is up to temp, or until it is no longer pink in the center. Dice chicken when cool enough to handle. Set aside.
While chicken is cooking, dice potato and boil in water until you can stick a fork into it. Drain and set aside.
Also boil veggies for up to five minutes, you just want them hot. Drain and set aside.
In a large bowl scoop out soup mix.
Do not make the soup according to the instructions on the can. Stir in enough milk to thin the soup just enough to be like thick gravy rolling off your spoon (about 1/4 or 1/2 cup, it's been a while since I made it).
Add chicken, veggies, and potatoes to bowl and fold them in gently until mixed.
Pour mixture into pie shell, cover with top pie shell, and pinch the edges together with a fork or your fingers (if cooled down enough). Cut a slit in the middle of the top, and bake at 400 degrees for about 20 minutes, until top crust is golden brown.
TIPS
Putting an oven-safe pan of hot water on the bottom rack below your pot pie will help the crust edges not burn before the middle is golden brown.
You can cut pie shells or use crescent sheets to fit a cupcake pan to make individual pot pies. Or you could make them like hot pockets on a cookie sheet.
You could use a cookie cutter on extra crust dough to make a topper decoration for your crust- like the shape of leaves for an autumn dinner, using a toothpick to make the marks on the leaves, or something fun for your kid, he might have fun making that part himself.
