I can only cook two things - Coconut Rice and a Stir Fry (which is different every time I do it).

COCONUT RICE

INGREDIENTS

200g Rice (dried weight)
400ml Tin of Coconut Milk
600ml Near Boiling Water
4 Tablespoons Sugar

I generally use 600ml of water because, when I open the tin of milk, over three-quarters of it is usually white and semi-solid. It doesn't fall out in to the pan with a 'splash' but a 'plop'.

METHOD

Put the Milk, the near boiling water (measured with the empty tin of the milk so you dissolve all the white bits you left behind. Use Oven Gloves!) and the sugar into a saucepan and bring to the boil.

As it starts to boil, throw in the rice. Then simmer and stir for the time required on the rice packet (mine said 10-12 minutes so I did it for 11).

Then pour out in to bowls and leave to cool. It does semi-set but not fully.

We serve it with some fresh fruit once the rice is chilled. Raspberries go really well. Blueberries tend not to have much taste so you need something a bit sharper than 'bland' or 'subtle'.

It's a 'sweet' flavour, true - but a jockey friend of ours uses it to put paprika on and serve with prawns. But, there again, she does have some disgusting habits...
 
I love coconut, and I love rice. :) However, the thought of coconut-flavored rice grosses me out. Some flavors should NOT be combined, and these are two of them.. I would definitely make this but I'd exclude the coconut..

There really is *no* point without the coconut. It would just be, er, 'Rice' :)!! Trust me, make it for someone 'else' as an experiment with some raspberries or sharp fruit (not citrus) and then you can try it. You may get converted...
 
Coconut Rice is my favorite ^^
I never make it myself, usually i bought in a package with roasted chicken/duck+chilli pepper (sambal)..
coconut rice here not using sugar and people add pandan leaves so it smell so good.. so fragrant..
I'm so in love with this coconut rice...

The one I do has a more subtle coconut flavour and is definitely sweet-tasting. Ogh, and I forgot to say, DON'T strain it. It all goes in to the bowl to chill. Yes, we have 'packets', too - normally with another flavour (2 minutes in the m/wave) - for savoury use.

And I just love inter-continental posts - what are Pandan leaves?!!! We've only just starting seeing Pak Choi and Dragon Fruit :)!! Us poor relatives of the world here in the UK!!

we dont strain it either here.. hohoho.. some people add turmeric too into coconut rice and it became yellow rice (nasi kuning) it also tasty ^^

Pandan leaves has 2 types.. fragrant pandan and the other to make green colors.. its something like this

I'm also interest with food from another country.. Its amazing that we have so many variations food ^^

The Coconut Rice I do is a more mellow flavour and sweet so it needs something a bit 'sharper' to give it a contrast. Raspberries are ideal. But not citrus. Bananas would work but they're a bit mellow too. I bet Raspberry Ripple Ice Cream would work, too, but I haven't tried it.

No problem at all - in the UK, we have a fair amount of new stuff trickling its way in for a couple of weeks and then it's rarely ever seen again.

A lot of the food is nothing much different from what we already have (but more expensive) and other stuff is probably a lot different tasting when fresh and where it's grown than when we finally get it here.

I always pick up Pak Choi for the Stir Fry if I can find it - and Spanish Chestnuts. I wish I could find fresh Carmel Dates again (with ice cream). Love Plantains shallow fried, Bread Fruit and Custard Apples. Christophines I don't see the point of. Dragon Fruit were nice but a little underwhelming in the flavour department - but certainly worth having again. Butternut Squash is to die for...

Are you using regular white rice or sticky white rice? In Thailand people eat sticky rice with mangoes.. actually some restaurant here serve that menu too BUT i haven't tried it yet.. >_<

You just need something a bit 'sharper' than the norm. Just seen where you're located so I have no idea what your produce variety is like. Blackcurrant is probably a 'no', too. A little mango might work.

We have bags of 'dried rice' that you boil in water for specified times. So I use that dried rice (not pre-boiled) and then boil it in the mixture for the time it says on the packet. Very technical, I know.

They are frozen fresh in Israel and then imported into the markets. But it's very rare that you can get hold of them cos they're generally sold only to the Jewish Communities and we don't have any here. So we just get the dried ones.

plantain shallow ~ fried???? plantain banana???? how it taste?? i only have fried banana here.. soooo curioouuusss..

We use the plantains that are starting to go black from yellow and slice them into, maybe, 7mm widths and then shallow fry them in some oil til they're a bit floppy and soft. We then usually eat them with salt as a savory. We just know them as 'plantains' but they look like a primitive banana (but not edible without cooking).

Custard Apples I've linked to - you slice them in half and put the half like a cup into your palm and then scoop out the flesh with a spoon. The stones are like bullets and not eaten. And, yes, they taste like Custard.

butternut squash.. only have pumpkin.. lol!

Butternut Squash I've linked to, too. The wife just treats it as a squash but I think roast is the best way. You can microwave it, though. The seeds in the middle and the outer skin isn't eaten.

My wife's the cook. But we had a Jamaican Stand near to where I worked so I would sometimes bring home stuff and see what she made of it. And then stuff sometimes appears in the markets here - but people seem to be fairly unwilling to move over to new unless there's a big effort by the companies selling them.

I would try it to make a stir-fry.. I just wouldn't add the coconut.. :)

My own stir fry (the only other thing I can do apart from boil a kettle) often has some pre-cooked plain rice that I add late on. But never coconut. I did a noodle stir fry last night with the last of the season's Spanish Chestnuts and I am suffering today.
I'm too old to eat roughage...
 
Adding coconut flavoring to rice is common in many cultures.

Myself, sometimes I prepare rice with cream of coconut. It's especially good in rice and beans, it makes it almost buttery.

My own stir fry (the only other thing I can do apart from boil a kettle) often has some pre-cooked plain rice that I add late on. But never coconut. I did a noodle stir fry last night with the last of the season's Spanish Chestnuts and I am suffering today.
I'm too old to eat roughage...


I DO use rice for stir fry.. :) I usally put in turkey or chicken, and some veggies or peppers. And 55 isn't old.. NINETY is old..lol

coconut milk doesn't really taste much like coconut, it tastes like cream or condensed milk (without sugar) or something...and yes without it their would be no point! I haven't tried it sweetened but it makes jamaican curry/or thai curry taste woooonderfullll there is nothing else like it :D
