Last night was my staff Christmas dinner. We had fish maw soup with crab, roasted piglet, lobster, deep fried breaded fish, roasted chicken, broccoli, pea shoots, sweet dumplings, and a sweet red bean soupy thing for dessert. I may have missed some things. I took pictures but have not figured out how to get them off this new camera (from last Christmas). My other camera I could send them to my email and get them that way but that option is not presented to me. I wanted to show you the pig! LOL. I brought home some leftovers as well .:D. (No pig.)

Oh! I forgot to mention the saucy prawns with candied pecans covered in sesame seeds.

Opened the freezer, not having a clue, and found the bags of leftover turkey. So I simmered it with lentils, sliced mushrooms, spices. Sprinkled beet powder on top😋

I have some sub rolls with the melted cheese on top. I use mayo, mustard, oil, vinegar, salt & pepper with ham n roast beef. Added avocado, tomato, pickles & onion, heat it for 20 secs and voila✨

Avocado Cheff Salad

Three +/- Ripe avocados spooned into large bowels

Add dollop of fresh cream or sour cream

One large date diced

Crush garlic clove

Multiple guacamole spices

Cooked brown rice (adente') with organic fresh ginger slices from the planter

Dash of salt to taste

Spoonful of horseradish

Fresh ground tripeppercorns + coriander

Lots of fresh baby spinach greens

Diced large tomato

Dukes brand Hot & Spicy Smoked Sausages

Mix ingredients, then add fresh baby spinach and smoked sausages on the top.

It's easy to make and the preparer can modify the ingredients and proportions to what is available. I just bought around 15 pounds of tomatoes and avocados the other day and so have been trying different original " recipes."
This was fairly quick ( other than rice) and easy to make, requires no cooking other than ginger rice and can be used as a dip, a side dish or as a full meal.

Flavor is outstanding.
The cream and avocado fats are keys to extending flavors of sweet, spicy warm, salty and savory contained in this dish.
It looks very appetizing. Children will likely enjoy it if not too spicy. Just use little or no horseradish.

There are a variety of textures too. For crunchiness, use as a dip. You can use coconut oil fried onions, plantain chips or blue corn chips fried in coconut oil.

I just had brupper- first meal of the day so late in the day it is breakfast, lunch, AND dinner LOL

I bought a tray of large mushrooms and a can of crab meat. I sautee the chopped stems, chopped garlic and crab in olive oil, worcestershire sauce, butter and a splash of red wine. Stuff the mushies and simmer in the sauce about 10 min and at 8 min top w/any cheese. I had a pouch of 90 second Balsamic rice seasoned w/garlic&ghee, a perfect union.
