I'm reviewing installing beer tap towers this morning. We have a counter height cooler that we/I are turning into a kegorator. It's a stainless steel top. Not exactly the easiest thing to drill and cut.

I have two towers and a drip tray to install on it. And I'm contemplating if I need to use longer screws and go through both interior sheet metal and exterior or just drill and make screw threads in the Stainless steel on the outside.

Or if possibly I can remove the interior panel and reinforce it all with metal, wood or something else.

But I did get the dough sheeter prepped and painted yesterday. Rust and scratches are all gone. It no longer looks like it's been in a Ukraine Bakery anymore. Looks nice and clean and ready to knock out some dough.
But I might have to do some more cleaning on the dough belts....they still feel a bit tacky after using a pressure washer on them. They are dry but....I'm thinking that there is still some old butter in them. Time for more soap and water and see what happens.

BTW....we are going to serve root beer and iced coffee...not adult beverages. And a beer tap is the best, easiest way to do nitro cold brew and root beer and two kinds of tea.

So my dough sheeter is looking brand new with all the shiny paint....

The kegorator is laid out to be drilled. Laid out some painter's tape and marked it up with centers for the hole saws.

I discovered that the top piece of stainless steel is all thin sheet metal...not even 22 gage. The inside has a ⅞" piece of Styrofoam inside of it leaving a ⅛" gap.
So mounting the towers is going to require some engineering. (Like "the Martian" movie)

So I went off to home depot and got a piece of oak and since it was just ¾" thick I also got a ¼" piece of poplar. They are glued up and drying as we speak.

I cut the Styrofoam to fit the piece of wood perfectly and so it will fit very tight. The oak is 5½" and the towers are 4½" wide at the base that holds the screws. Otherwise they are 3" towers.

Now comes the decisions. I can use either a 1⅞" hole saw or a 2½" hole saw. I really want a 2¼"....but I don't have one. The 1⅞" might wobble enough to get me what I really want. But it's definitely going to be tight. And cold air going up the towers also helps keep the lines inside the tower cold too.

Either way I'll use some contact cement in the morning to help glue the wood inside the Styrofoam to the Stainless steel. Between the foam and the contact cement it should be good.

When dry I fitted the wood earlier it made it rock solid with no give or bulging whatsoever. Ought to work out nicely. (I hope)

Proof is in the taps that pour.

Gonna think some more about it all.

Contract got approved for the bakery purchase. Contract is also approved for the building. Now we just need the contractors to submit permits and get them approved.

The existing coffee house purchase is still in the air. Dunno what that owner wants.

Not gonna be much longer....then the long days will start.

Got the taps and drip tray installed...had to make yet another trip to Home Depot for a ⅜"brass close nipple and a coupling.
The nipple from the drip tray wasn't long enough. The nut and washer wouldn't both fit. Now we got room to attach a hose to a bucket for drips and pour outs.

So I went and got some more #10 x 1" SD rounded head flush mount screws and the nipple and coupling.

All done. The oak blocking worked great. Everything is sturdy and doesn't shake at all....well, the wheels turn when you try.

Double checked and everything is down tight, square, and plumb. Smooth finishes from some grinding. Top is completely re-attatched. Nothing left but to add gas, regulators, manifold and tanks.

I went with the larger hole. Because the lines coming out of the tower were not long enough....so I had to use the larger hole saw and connected the hoses before I mounted the towers. Yes, I remembered the rubber washer and tightened Everything down with the crescent wrench and channel locks before I screwed the towers down with their gaskets in place.

All done.

Ok so today I bought a bread slicer off of Facebook marketplace. And when they were looking for the loaf bagging tray (they were clueless) they found a 4 strap Pullman loaf pan. ($115 value) that they gave me to go with.

So each Pullman loaf is a 2# loaf of bread....kinda like wonder bread but more like real bread. It's certainly shaped the same.

So this loaf pan holds 8 pounds of bread. (4-2lb loaves) My mixer is an 8 quart machine. That means that it can hold 8lbs of bread dough at a maximum.

So I see me making some more bread very very soon. I just finished making my wife 2-1.5lb loaves of whole wheat.
Plus I made her some creme brulee and a yellow cake with chocolate Italian buttercream.

I'll give away some bread though...dunno if I'll make it whole wheat or white. Or both.

Now why do I suspect that one day I'll see people standing outside the bakery holding up cardboard signs that say something like "Will give hugs for bread"

Or something along those lines.

Well I tried to get my truck to the garage because the radiator is leaking. Going through a half gallon a day.

Said they were full up and to drop it off tonight.

That's gonna put me behind schedule for bread making. Oh well....

Well....got my calculator out and began calculating...
Looked up and was going to make several variations of Pullman bread...
Got my Pullman loaf pan all cleaned and spit shined....

And then tried to see if it would fit in the oven....

Nada....half inch too big.

Oh well...

"No bread for you" said the oven nazi.
