Hey Everyone,

I was thinking about this the other day when a couple of chat friends were discussing allergies to dairy products. I have to admit that if I found out I had to give up dairy, I'd be in a lot of trouble. I could put cheese on most anything (including on top of other cheeses, as I like to put a layer of white cheese, and then yellow cheese, on many of my foods.)

For some reason, I also go in phases of which cheeses taste best to me. For a while I'll use mozzarella, then it becomes too bland, so I switch to cheddar... alternating between mild, medium, and sharp -- but lately, my favorite cheese has been colby jack. We have some grocery stores here that have a wide array of interesting-looking cheeses, but alas, they're a little too expensive for my taste.

* What kinds of cheese are your favorite?

* What kinds of cheese do you NOT like? (I'm always fascinated by people who love blue cheese, as even the smell it too much for me.) Or maybe you don't like cheese at all?

* Do you have a preference for cheese to be shredded, cubed, sliced, etc?

* If you're allergic to dairy, do you practice strict abstinence, or sneak in a little now and then? How long does it take to recover?

* If you live in mixed company (some allergic, some not,) what do you do for family/group meals? If a parent is making some kind of cheesy casserole for dinner -- do they have to make something completely different for those who are allergic to dairy?

Cheese makes everything better... Heh, I heard that somewhere and have a tendency to agree! My fave cheese has got to be Havarti, and it has been in top spot with me for many decades, since it was first introduced to me as a rather young girl... which may actually have been centuries ago LOL. I jest! But I do like cheese an awful lot, and I almost posted in another of your recent threads about expired foods, because I had not long before that eaten a block of cheese that was about half a year past its best before date. Yes, Havarti. It had not yet been opened and looked only slightly suspect (no mould!) but passed the smell test, so... I like it on pizza, which I tend to eat at least twice a week, home made, with a variety of toppings, including other cheeses such as mozarella and cheddar as you mentioned, and also feta. Feta cheese is great on pizzas (and also in pasta salads), and I do like black olives with that, and sometimes bacon bits, real bacon bits, although lately I have swapped that out for the healthier choice of sliced roast chicken breast. I also add grilled onions, mushrooms, and peppers, which I get from the breakfast hot bar at Whole Foods when I go for coffee on my days off work. Sometimes I mix the grilled peppers with fresh sliced red and yellow peppers. It all goes great with cheese! The pizza itself cooks in about twenty minutes and is delicious. I do like Monterrey Jack cheese and Colby, though I seldom buy them, and wonder if you have ever tried a white cheese called Farmers? There was a French hard white cheese I really liked, but it is difficult to justify the cost of things like that, and then I forget the fancy names LOL

When I was growing up, there was a rather prominent campaign with the tagline, "Cheese, Glorious Cheese!" sang in the form of a jingle, and a lot of times when I'm in the store, I still sing this to myself as a I approach the "Glorious Cheese Aisle!"

One of the biggest inspirations for my food threads (and why I put them in the Family Forum) is because there seem to be so many problems with allergies these days, I always wonder what parents do to protect their kids -- or even make a family dinner every night, especially if they or their kids are allergic to different things.

I'm just empathizing with all the parents who have think, "Ok, Johnny is allergic to peanuts; Sara can't have eggs; Billy can't have dairy, wheat, or gluten," EVERY single time they fix a meal.

My goodness!!!

What on earth do parents in such situations do?!

Ah, yes, I forgot to mention Parmesan! It goes well on pizza, and also in pasta salads, as well .:D

Though I must admit, I do not believe I have ever sung to my cheese.... :unsure:

I like a lot of cheeses, but I will try to list my top three favorites.

1. Fresh mozzarella cheese.

Seriously, although I plan on remaining single for the rest of my life, if you put a woman in front of me who was wearing a chain made of fresh mozzarella cheese around her neck, then I would probably propose to her on the spot while nibbling on her neck (lace). Fresh mozzarella cheese is not only my favorite cheese, but it is in serious contention for being my favorite food on the planet.

JUST THINKING ABOUT IT MAKES ME WANT TO SING!


2. Sharp cheddar cheese.

Give me a chunk of it, a knife, and some Ritz crackers, and I am good to go.

3. Muenster cheese.

Probably not a popular choice, but I love it. In fact, I bought some earlier today.

On the downside, I am definitely not a fan of blue cheese or feta cheese. In fact, just the thought of them makes me want to :sick:.

Sometimes I'm in the mood for "just" a piece of cheese -- not cheese mixed with or on anything else -- and Muenster is always a perfect choice.

I also like provolone, but I've found (in my area at least,) it's hard to find "just" provolone -- several of the versions in the stores here are smoked -- bleh.

Provolone cheese would more than likely be my fourth choice. Depending upon my cravings, it could be my third choice. The supermarket by me sells a variety of different sliced cheeses and chunk cheeses. When I buy one of the sliced cheeses, then it is normally Muenster or Provolone. Today, I went with the Muenster, but I have gone with the Provolone many times in the past. When I buy sliced cheeses, I normally do not bother putting the slices on anything. Instead, I just fold up a slice, and then down the hatch it goes.

It is a good thing that I bought some cheese earlier today, and already ate some, or else I would probably be hobbling to the grocery store right now.

Definitly Bleu Cheese, Brick, and extra sharp Chedder. the more aromatic the better!!!
I can't say I care for anything that crawls in my mouth (such as blue cheese does), but I do like a sharp Cheddar!

Actually, any cheddar is good .:D

Has anyone mentioned the squeaky curds yet? Do they count as cheese? .:unsure:

Seoulsearch I got news for you. We can't stand the smell of bleu cheese either. We eat it despite the smell, not because of it. It is the durian of cheeses.

Despite that poem I just posted, I would rather have a good port du salut than brie any day.

Different cheeses have different uses. Havarti is good for eating by itself, or as a cheese sandwich with a bit of mayo, but it has a very mild flavor. Put it with ham or turkey or just anything else in a sandwich, and you can't taste the cheese at all. But there are other cheeses that are great for a sandwich, but not nearly as good as havarti for snacking.

There is a fake cheese recipe using oats at the end of this video. I have made imitation scalloped potatoes, hamburger stroganoff, mashed potatoes and grilled fake cheese.

May I ask, what are squeaky curds?! 😳🧀
Curds squeak when you chew them... though perhaps the gravy on fries in the making of poutine lessens that effect?



Though truth be told, I never heard of poutine until... well, many years after eating curds straight out of a bag...
