That is correct. But Pharisees who had entered the churches made Torah observance a condition of salvation. Since the Torah contains "the Law of Moses" those insisting on applying this to Christians are called legalists (a term derived from "law) or Judaizers. The epistle to the Galatians addresses this serious issue. The modern application of "legalist" is incorrect.
Our salvation is from sin (Matthew 1:21) and it is by the Torah that we know what sin is (Romans 3:20), so while obedience to it is not a precondition for salvation, being a doer of the Torah is a condition because it is intrinsically part of what the content of God's gift of salvation is. If God is a legalist for commanding His people to obey the Torah and Christ is a legalist for living in sinless obedience to it and for spending his ministry teaching his followers to obey it by word and by example, then we should all be legalists. The problem in Galatians with the Judaizers was not with people teaching Gentiles to follow Christ's example of obedience to the Father that he set for us to follow.

And it is from the New Testament that know BOTH (1)what sin is and (2) how God has made provision for the sins of the whole world.

The second truth is far more important than knowing what sin is. The Bible also says that all men have a conscience, so they already know what sin is. But they do not know the remedy without hearing or reading the Gospel.

What would you call someone who thinks that all 613 Levitical laws apply to Christians now?

The commandment of God are not heavy. The Commandments of God are not upsetting.
So why are they always disobeyed? Only one person has obeyed God's commandments. Hint: it's not you and it's not me. The commandment not to covet brought Paul undone (Romans 7)

The three versions of Legal may not be found in Scripture, but they surely are numerous postings of them here on BDF.
