Which let no person judge you in meats by telling you what you can and cannot eat.
Colossians 2, is not about clean and unclean (as those words are never used), but if you read the context, along with Eph. 2, Heb. 9-10, Eze. 45:17; Numbers 28-29, you will see that the context is "meat (offering) and drink (offering)". Paul is directly referencing Ezekiel 45:17, in those places in the NT.
God will indeed judge you, me or anyone, for eating/drinking that which God said not to.
Isa_66:17 They that sanctify themselves, and purify themselves in the gardens behind one tree in the midst, eating swine's flesh, and the abomination, and the mouse, shall be consumed together, saith the LORD.

Col. 2:16 – Plural sabbaths, “σαββατων” (G4521), NGPN
Context: “shadow”, “ordinances”, “against”, “carnal”, “worldly sanctuary”, “things to come”
[1.] 7th day made for man before sin of man & need of type/shadow (Mark 2:27; Col. 1:16)
[2.] 7th day is an eternal memorial, pointing backwards, “Remember” (Exo. 20:8)
[3.] 7th day is singular and specific (“the”, “ה”, “ha”) (Exo. 20:8,10,11)
[4.] 7th day differs from yearly, 7th year, & 50th year festal types (Lev. 23:3,4,38, “Besides”), as they festal types are governed by “moons”, not so the 7th day, being light (Pro. 6:23)
