3 large eggs
1 spring onion, finely sliced
Pinch of salt
Pinch of black pepper
Knob of butter
Dessert-spoonful of sour cream
Dessert spoonful fish sauce
METHOD:
Non stick pan. Medium heat. Let it heat up before cooking.
Crack eggs into hot pan. Stir with spatula, scraping egg from bottom to avoid any burning. Periodically remove pan from heat if the egg is solifying to the bottom of the pan quicker than you can scrape it off. Cook eggs until they are hot, but still moist (you don't want them dry. You want about 10% liquid egg, still).
Remove from heat.
Stir in your butter. Once it is incorporated, add the salt, pepper, sour cream, spring onions and fish sauce, and mix in.
Serve .
