I’ve been very aware lately of how much washing-up I make, just cooking for one, as you know lol.
Psalm 104 says food strengthens the heart. I’ve noticed how a nice meal can cheer me up.
So what’s your favourite?
Mine is fried eggs, home-made fries and plum tomatoes out of a tin 🥰
(with plenty of salt & vinegar).

My favorite meal is pizza from the local convenience store, with extra, extra, extra cheese. Load it up! I'll pay for it.

Oh wait... homemade...

My favorite homemade meal is to take some leftover pizza, scrape all that cheese and toppings off into a pan, crack eggs and cook the whole mess scrambled. I eat the crust with butter while the eggs'n'stuff are cooking.

In the absence of leftover pizza I toss whatever I find in with eggs and scramble it. Corned beef, lobster, mac-n-cheese, leftover bread pudding if I want something mildly sweet... just about anything can scramble in with eggs.

Have a few:

Spaghetti with meat sauce (I use canned diced tomatoes)

Two fried eggs with rice and steamed spinach, sometimes with spam.

Salmon (seasoned with lemon juice and a spice like thyme about 30 min beforehand) and rice.

Loaded baked potato with whatever meat leftover I have, with toppings.

Instant noodles with eggs (I like curry flavor)

A fave easy meal for me is salsa and sour cream with corn chips.

The easiest one I know of is a Naan bread slathered in peanut butter rolled around a banana :)

I don't have to boil water, open a can, chop anything up, or stir anything LOL

Melted cheese on a bagel is a close second.

Tuna in a tin mixed with mayo and seasoning on a toasted bagel is a close
third, but that involves opening a tin, mixing, and baking the bagel :giggle:

Eggs have been mentioned, and I do love me some scrambled eggs made into an omelet with melted Havarti cheese, but feel I am being too lazy if I do NOT add some type of chopped up veggie, usually celery and onion, plus mushrooms, yellow pepper, and zucchini if I am feeling very motivated... which is why it was left off my easy list, though there is certainly nothing difficult about it LOL. It just requires a little more time and effort. Same goes for certain pasta dishes, especially those without meat. Adding a cup of macaroni or some other dried pasta to simmering spinach Ravioli or cheese Tortellini and then mincing onion and chopping celery and opening a tin of stewed or crushed tomatoes to which I add sour cream and more seasoning is likewise a fave, and makes at least two to three meals in one cooking session. Sometimes I double up my omelet ingredients so I can simply reheat the second portion the next day without all the prep, which certainly counts as easy :) I have either Naan or a bagel with my omelets (oven heated, of course). Another relatively easy meal is a Naan bread covered with sliced mushrooms topped with Havarti and Mozzarella cheese, tomatoes, plus seasoning, baked to crisp the bread and melt the cheese. Garlic powder, onion powder, and black pepper goes in/on almost every savory dish :D

I don’t know if I have a favorite …I think whatever I am eating that day is my favorite.

I do have stand by foods, which I make ahead of time and freeze… mostly consisting of soups and pasties. I generally do 15 containers of soup and 30 pasties every couple of months.

I should probably clarify the word pasties, as it is a double entendre. I am pretty sure that a pasty (what strippers wear) probably don’t have much nourishment ….and….. ….I’ll leave it at that. A pasty or plural pasties are a baked pastry that is filled with anything you want…. kinda.

I do three different ones…. steak, chicken, or no meat…. then add…. potato (sweet and regular) carrots, celery, onion, rutabaga, turnup, and jicama….add seasonings, bake and freeze …typically eaten with ketchup for weird people….. or gravy for normal people….that’s me….. I’m normal.

Spring and summer I eat a lot of salads… that I will have once or twice a day…This is not a dainty salad …..it is big and has 15-20 different items, most of which I prep about every 5 days .....so it only takes me about 15 min to put together.

I just realized how boring I am when it comes to food.

Get a couple pkgs of stir fry & bean sprouts, mushrooms optional, saute about 10 minutes w/can of chicken & , pour over ready cooked brown rice, add a little soy sauce 😋😋😋

Today’s easy meal from desperation lol:

cheese omelette with artichokes or olives from a jar 🍳
Canned rice-pudding for dessert 🙂

I’m looking forward to being well enough to cook chicken curry and rice in bulk then freezing some. I use Chinese paste which just needs water adding. I stir fry the chicken and veg, it’s pretty easy and so much cheaper & healthier than takeaway food.
If rice (or potato) is allowed to cool before eating or re- heating, it actually changes structure and becomes better than refined carbs for blood sugar levels; so it keeps you full for longer 😊

Saturated fats (like real butter) are even more effective for satiety. 😎

For me what I consider hard meals are time consuming meals, like a curry. Usually for this, I have to prep the night before like chop the different vegetables and chop and marinate the meat, and mix the spices. I also make make ground beef kabobs which is time consuming due to mixing the spices, marinating for the night, cooking on the stove, and then baking in the oven for a finished look and also so the kebabs are hardened.

I saw a corn chip pie like that once in a neighborhood place where
I had stopped in for coffee while in the area for some other business.
It did look tempting! :D It was not a flat pie, either, but piled quite high (y)

I had to call my sister to confirm that as children growing up in our family of origin, Havarti cheese was never in the fridge unless I brought it home after discovering it (probably around the age of nine or ten) at a farmer's market where I worked with my dad and brothers. We only ever had cheddar cheese and Velveeta cheese at home. Oh, and cottage cheese, too, of course... and cream cheese! ;) My sister also informed me that we never had lasagna until she requested it as a young teen from our mom, who made it, not with mozzarella cheese, not with cheddar cheese, not even with cottage cheese, but with Velveeta cheese :oops::giggle: I am making a Naan pizza right now with Mozza and Havarti, mushrooms, onion, and tomato :D If I had not eaten some corn chips earlier, this would count as my breakfast :)

Tonight I’ve got sourdough crisp breads with goat’s cheese, lambs lettuce, cherry peppers stuffed with cream cheese-an instant meal with only a plate and knife to wash 😁😂...oh an a few ready-shelled pistachios 👌A glass of red goes nicely, alcohol-free version of preferred 🙂
