Well...Call this instant gratification but I just made pasta for perhaps the second or third time. I recall making it at least once before because who wouldn't at least try that if they like pasta?

The first time my noodles got waterlogged and just tasted like pasta-ish cylinders full of water about 8 years ago.

Fast forward to today. I read a few websites on how to do dis and even went on Quora to figure out how long to boil it for reading other people's opinions and STILL my pasta ended up barely palatable.

When my mother makes it (usually) it's great. Something I can eat without any sauce and just a little bit of butter and some parmesan and it's tasty but just feels like a lot of empty carbs.

I'll probably petition her to make me some and "data mine" her for how to do it myself but I'd like to hear from you all.

I'm not talking about the dish itself (tomato sauce, alfredo, meat etc.) just the noodles.

I suppose I could try an experiment twice a week noting down what portions I use and that may work but shortcuts are nice ;)

P.S I did salt the water with a few shakes of some himalayan salt. Brought it to a boil and then added the spaghetti and stirred every two minutes and it was probably on the stove for 7-8 mins. Still watery...
I love pasta but it is high in carbs lol

It is difficult to give exact cooking times since different thickness of spaghetti will take less or more time to cook. The one I love is spaghetti angel hair...it takes 3 to 4 minutes to boil this kind of spaghetti. But one thing I noticed...so that it won't get soft and it won't look swollen lol

Use a big pot and enough water so that the spaghetti can move freely inside 😅 Dish out the spaghetti (if u are boiling the thicker one which is the cooking time is longer ) about 2-3 minutes earlier than the package says to get that al dente spaghetti bite.

Well, the best tip I can give is practice more like 20 more times 😂 it took me years to get that al dente bite 😁

The carb thing ids a concern for health, what is a good, healthy pasta? On Pasta Grammer Eva speaks of Bronze Cut pasta as a pasta that she looks for first.

I have just cooked some fresh (not dry) linguini :D I made a crushed tomato with fried ground veal sauce for it, amply spicing and herbing the meat as it cooked (celery seed, onion, garlic, and cayenne powders, plus salt, pepper, and Italian herb mix). It is quite yummy! I added diced celery and green onions to the sauce :) I do not believe I have ever bought veal before, and this is the second time in my life I have eaten it... it is quite a mild flavor, less overpowering than ground beef or poultry ;)

It really is! I used one and a half 350 gram packages of noodles, one pound of fresh ground veal, one 796 ml tin of crushed tomatoes, 3 celery stalks, and four green onion shoots... with lots of added flavor via the herbs and spices :D It is probably enough for at least four meals :)

We grow fresh basil and thyme in our garden. Darlene uses it for her sauce. Your recipe sounds delicious.

I just don't eat it anymore, unless it's made of anicent millet or vegetables
I have been doing so much research on foods that are not good for you.
We need food that's anti inflammatory. Your be surprised how sick we are because of bad decisions with out eating habits. We are supposed to eat 70% alcline foods and 30% acid. But it's upside down. We eat too many acid foods and pay later with all manor of sickness
I sound boring but, I had to learn the hard way, let food be your medicine. Much love and peace x

I'm asking "Santa" and "Birthday fairy" for a PASTA MAKER MACHINE......
might be time consuming, but looks fun!
And most likely going to be a WHOLE LOT HEALTHIER than the convenient, cheap, boxed pastas at the store.

Actually, all the videos I watch makes me think of a grown up version of play doh. :p

I have heard something about ancient millet or vegetable pasta being the healthy choice.

Thanks! What a lovely use of space: To grow your own herbs :)

The pasta dish yielded five very hearty, protein, nutrient, and carb rich meals :D

At under $3.00 each meal, that's very economical ;)

Viva la pasta! Although I’m hypoglycemic, I can easily handle large pasta dishes if combined with protein. Pasta is my chocolate.

Thread update. New noodles have been purchased.

I am going to attempt plain ole fettuccine alfredo and we shall see if what happens. Might not be til monday but if that works out, I may try something a bit more adventurous ;)

I recall it being sooo tasty as a child and the one time I made it, it was gross...but I just feel I need to press onward into passable pasta proficiency!
Taste the pasta while it's cooking to figure out how well cooked it is.
Heavily salt the water you boil it in and use a capful of oil to keep it from boiling over.

I usually make my own out of whole eggs and semolina flour with a drop of oil and salt and pepper.

Then once drained, heat sauce and noodles together.

I make a great white sauce by whipping up tofu in a blender with brown or red miso, vinegar and Italian seasoning. Goes great on noodles. And nothing can curdle.
