I had a slicer/dicer once that I used a great deal over quite a few years, and was at the time, one of the best things I ever purchased because not only did I use it so much, but it saved me a great deal of time. I bought it on my way to a Don Henley concert
It looked much like this except mine was off-white

That's one style of many mandolines.
Most of your high end restaurants will use one. Those ones aren't cheap but they last forever. Mine was over $200 about 15 years ago. But they can make great thin consistent slices.... even potato chips if you want. But usually I don't because it's a quick way to eat a whole five pound bag of potatoes in one sitting.
I use mine a lot for gratin potatoes and other stuff. The less expensive plastic ones are usually just fine for most households. You aren't using them everyday for a couple hundred pounds of potatoes or a 50 lb bag of carrot sticks or something else like that. (Done by a 350lb guy just out of prison named "tiny")
They are almost a "must have" in any well equipped kitchen over and above the other gadgets (and I have a ton of gadgets)
I remember Ronco....they made the "Kitchen Magician" and spiral slicer and ginsu knives and all kinds of things

Good morning! I do not recall the brand name of the slicer/dicer I had; the concert was on fair grounds, and I bought it from someone giving demos while hawking their goods. I think I paid $30.00 for it which seemed like quite a bit, but I did use it for well over 20 years, which may have been the best thirty dollars I ever spent... though the thing-a-ma-bob that was supposed to protect your hand from the blades while gripping whatever was being sliced/diced lost one or two of its "teeth" early on. Even so, that barely slowed me down in all my slicing and dicing of veggies

oh! and thats a neat trick at the end, cutting slits in the potatoe before running it through to get diced might work for onion too

I got rid of the one I had after over 20 years of use...
Not sure why, now, except to say I was drastically downsizing (got
rid of probably 2/3 of everything I owned a little less than 10 years
ago), plus, I know I was not using it as much toward the end, plus
the off white color had gotten grody looking over the years

Evening Magenta, you can never find a gadget that does everything. I think I may just rely on the good old knife.
My sister in law loves the thermomix (I think its called). She jokingly says if she had to choose between my brother or the thermomix, the thermomix would win

I'm the same way, I will soon be forced to join the Amish community and/or do everything by hand more and more because they keep sticking their smart stuff in our dumb appliances. Been purchasing more manual things these days.
