It can fall on any day and none of us would know what day the last day is... It is represented by the final day of the Feast of Tabernacles, that can fall on any day of the week.
The "final day" of the "Feast of Tabernacles"... I cannot tell if you think that is the "7th day [of that feast]" (which would indeed be "the last day" of that feast,) or whether you are attempting to say that "the eighth day" was considered "the last day of the feast of Tabernacles" (it wasn't--"the eighth day" was SEPARATE from "the feast of Tabernacles" and NOT considered "the last day" if IT)--but I cannot tell exactly, if this was what you intended, or the other.
As for your phrase,
"it can fall on ANY DAY OF THE WEEK," well, now you're messin' with someone whose kept a record of such things and knows that this is indeed NOT THE CASE. For example...

You are simply incorrect, here, on this point.
Leviticus 23:35-36,‘On the first day is a set-apart gathering, you do no servile work. ‘For seven days you bring an offering made by fire to יהוה. On the eighth day there shall be a set-apart gathering for you, and you shall bring an offering made by fire to יהוה. It is a closing festival, you do no servile work.
Again, "the eighth day" was distinct (from the 7 day feast of "Tabernacles")
[and from what I understand, ANYONE was permitted to join them for the 7 day Feast of Tabernacles (meaning, Gentiles were welcome)... but "the eighth day" was for Israel to "meet with God ALONE"]
