So why do many believe that their god is a wishy washy God. Changing continually.

New testament – dont bother

Indeed they are related, but under the new covenant matters of food, drink, feasts, new moons, and shabbaths are not required to be observed. In the millennial covenant, they will be required to be observed again.
I would not expect someone who rejects the Torah to suddenly welcome me with open arms.

The process you propose is completely impossible, and quite ludicrous. "Obey the Torah, then receive the Spirit, and then you will obey the Torah." It also clearly contradicts the teaching in Galatians.

So you think the apostles who took part in Council of Jerusalem were ignorant, disobedient, stubborn and are now burning in Hell.
