This is a different recipe than most of the cake ingredients I have done and it is a dense cake but so good... Better after the frosting has been on the cake overnight....soaks in...
Caramel Apple Cake
Cake
1 cup vegetable oil
2 cups sugar
3 eggs
3 cups flour sifted
1/2 teas salt
1 teas baking soda
1 teas cinnamon (more if you like cinnamon)
2 teas vanilla
1 cup chopped pecans (optional)
3 cups peeled and chopped apples
Frosting
1/2 cup butter
1 cup brown sugar
1/4 cup half and half milk
1/2 teas vanilla
Directions
Cake
Preheat oven to 350 degrees. Grease 9 x 13 pan. Combine oil sugar, vanilla and eggs. Stir in sifted flour, salt, cinnamon and baking soda. Add apples and pecans. Spread in prepared pan and bake for 45-50 minutes. Cool for 2 hours. Then prepare frosting.
Frosting
Boil all the ingredients in a small pan for 2 minutes. Set pan in bowl filled with ice water. Beat icing until of spreading consistency. Spread on top of cake.
That's it and like I said this is better when the icing is on the cake overnight as it just melts into the cake....

I am at my friendly neighbourhood coffee shop getting my caffeine fix, and having breakfast, after having been up for hours 
How are Tango and Sugar? My little Luna is really enjoying the new carpets I got for my apartment, as well as all the new spaces for her to lounge since I cleaned up my place with the help of some people from church, one couple in particular, who all but begged me to allow them to be a blessing in my life. I really do feel blessed in so many ways, and I hope you do too

You place looks so nice would love to just come and visit you and enjoy the new carpets with Luna. Tango and Sugar are doing very well and we are about $300.00 away from getting Tango's thread eating fiasco paid for!!! so happy since the beginning bill was over $4,000.00 and help of Frankie and Friends and you we are just about done with it and that makes me happy. That is one expensive Tango....Love him to pieces though and do not regret saving his life and again thank you and Luna for helping our furry friend.
Jerry and I are doing o.k. he's tired from working and I'm tired just cause I'm getting older.... but we keep kicking and loving life together as it should be.
Your Luna reminds me so much of my Samantha she's been gone for several years now but loved that fluffy kitty with her dark points and blue eyes.
Glad you are back we were missing all the sparkle and it was a purple/sparkle loss with you gone... We need you here to add color to our lives......Welcome Back my friend. Makes me so happy to see you and Luna..

I believe the recipe is an Amish one and I had never used a cup of oil before I'm used to adding butter and baking powder to cake so this was a little different for me but it is so good..... that I have made it twice now....
