Probably one or two larabar snack bars. I don't eat very heavy for supper. Breakfast, now, breakfast can be epic.

its called pizza stuffed pepper. Its sausage with pizza sauce and mozzarella cheese stuffed in a red bell. Baked in the oven. Then add tomato, spinach and mushroom. It is very good.

Lol, that is a photo of my son's birthday meal 2 years ago. Figured illustration would help.
Russian stroganoff (spiced up my way), tators, pizza stuffed pepper, and biscuits.

Last nights supper was simple, homemade green chili burritos.

I fabed up a mexican quiche for fathers day last. Chorizo eggs cheese etc on a corn meal crust. The kids kinda freaked, they seldom eat what they don't recognize. But the grown ups scarfed it down and quick.

I start pizza sauce with a marinara base for mine. I love mild green chilis, onion, garlic and basil in it most of the time. I go easy on the tomato paste [acid] but use sliced roma tomatos to add bulk and a chewy/jucy texture.

If I have time I make homemade fresh from my garden. That day it was plain simple canned pizza sauce.

Homemade romas from garden, garlic, oregano, basil, and Thyme. A bit of onion, brown sugar, and a dash of balsamic vinegar. All fresh from garden except vinegar and brown sugar. Simmered all day then canned.

Brn sugar is key. i reduces the acid and possible indigestion. I'm retired, when I cook for the fam I have all the time I need. Garden veggies not, our chickens eat them as fast as they sprout

Breakfast was three thin slices of homemade whole wheat sourdough bread with two thin layers of havarti cheese between them, slightly warmed but not melted. Delicious!
