Tithing is giving 10% of your income to God's work. It is a form of trusting God to provide for you even though you give Him 10%.
It is not mandatory, but it "tends" to be a mark of spiritual maturity. You can be spiritual without it, but God wants us to honor him with every part of our lives. This is just another way to worship Him.
Also it "sanctifies" your work. Not everyone is called to be full time ministers. But, by giving 10% (or more) of everything we receive, we turn our work into a ministry.

In OT times, tithing was more or less synonymous to giving some of your food (most often crops I think, but maybe also animals?) for a common storage. In the OT it was mandatory.
i.e:
Malachi 3;10 Bring the whole tithe into the storehouse, that there may be food in my house. Test me in this,” says the Lord Almighty, “and see if I will not throw open the floodgates of heaven and pour out so much blessing that there will not be room enough to store it
In modern days, it is carried on by giving money to the Church.
