One of my favorite easy cheap dinners.


Mix 2 cups shredded sharp cheddar, 1 small jar pimentos with juice, and enough mayo to meld it together (a tablespoon or a bit more). Spread a thickish layer on bread, top with bread. Broil until brown, flip, brown.

Yields a few sandwiches. If you want more, use 3 cups cheese and a big jar of pimentos.

I've got to admit, I've never even thought about grilling a pimento cheese sandwich....

I LOVE grilled cheese sandwiches, but never thought about that one....

now you're making ME hungry....
 
Just toss me a piece of bologna in these hard times :p

So is that seriously all there is to pimento cheese? That is quite pitiful that I didn't know that. Imma have to try that if I can find pimentos
