Sharing my tuna salad recipe

I'll admit I'm a sucker for tuna salad. However, I don't like mayonnaise or miracle whip so, through trial and error, I have created my own recipe for tuna salad.


Ingredients:

  • 1 small (5 ounce) can of tuna in water
  • 1 teaspoon of lemon juice
  • 1 tablespoon of olive oil
  • 1 tablespoon of dill relish
  • 1 teaspoon of dijon mustard
  • 1 tablespoon of minced red onion
  • 1 tablespoon of minced celery
  • 1 tablespoon of chopped parsley
  • 1 tomato, sliced
  • shredded lettuce
  • 1 dash of black pepper (optional)
  • 4 slices of wheat bread


Directions:

  1. Drain and flake the tuna.
  2. In a bowl, combine lemon juice, olive oil, dill relish, dijon mustard, red onion, celery, parsley and black pepper
  3. Add tuna to the bowl ingredients and mix well
  4. Spread the mixture over two slices of bread
  5. Top each sandwich with tomato slices and shredded lettuce
  6. Toast each sandwich in a toaster oven (optional)
Yield:
2 sandwiches

I am going to have to try this since this tuna does not seem to be a rich as the ones with mayo or miracle whip.
 
Don't be afraid to experiment with this recipe, I found that adding some Italian seasoning and a sprinkle of crushed garlic improves the taste a great deal.
