Ingredients:
2 15-oz. cans whole kernel corn, drained
1 cup cucumbers, diced
1/4 cup chopped red onion
1/3 cup mayonnaise
2 tbsp. fresh cilantro, chopped
2 tbsp. grated Parmesan cheese
2 tbsp. lime juice
1 tsp. paprika
1/2 tsp. garlic salt
1/4 tsp. ground cumin
Directions:
Mix corn, cucumber and onion in a large bowl. Set aside. Mix remaining ingredients in a small bowl until well-blended. Add to corn mixture and toss lightly to coat. Cover. Refrigerate 2 hours, or until ready to serve. Serves 6.
