Easy Does It Meatloaf

Needed:
1 large muffin pan
1- pound of ground beef
1- cup of plain, canned bread crumbs. You can also crush no salt soda crackers, but they must be finely crushed.
1/4 cup of your favorite salsa
1 bottle of ketchup (for top of pan cups)

Preheat oven to 350°F

Mix meat and bread crumbs thoroughly.

Add salsa and work through mixture until evenly distributed (especially for those using chunky salsa)

Fill each muffin cup until meat is almost even with the top and level mixture.

Spread a thin layer of ketchup to prevent the top from drying out.

Bake until all sides have completely pulled away from the cup edges.

This should take between 30-45 minutes. But, be certain all edges of the meat has detached from the cup.

Drain excess grease with absorbent material. Some use strong paper towels and blot the bottom, some use washable cloths that have been washed with vinegar only and no fabric softener or sheets.

(Great laundry tip btw. Vinegar kills bacteria, is considered hypoallergenic because it rinses clean, is a natural substance. and is safe for materials used while handling food. I wash my wood spatula handles with a 50/50 water dilution because it doesn't harm wood, but seeps into any pores, disinfects and rinses clean).

Oh yeah, let me know what you think. I've been told mine is the best recipe (including Moms with children).

Meatloath is a contentious topic particularly in the Singles Forum. Still, my wife is going to make a meatloaf tomorrow. Good eating for sure. She tops hers with ketchup too.

Your muffin loafs sound interesting and merit consideration. I like that salsa touch too. Might just pass that along.

I am very sensitive to certain chemicals. When I clean it's generally vinegar, baking soda and lemon. For pest control: Cinnamon, peppermint oil and diluted vinegar in various places. Is there a thread with all natural cleaning tips? People might have a lot of ideas/need for them.

I like your ideas about vinegar. That's why I use it too. Vinegar and baking soda and sometimes combined take care of most cleaning tasks very well.

Correction:. I saw the ingredients and bread crumbs and thought she was making meatloaf. I finally got to watch the rest and see she was making meatballs.
It's too sad right now to watch all at once.
