what I was thinking at the time. So, I therefore believe that to hear Him is the correct interpretation, and that only His sheep can
do so.
Regarding the Jews, I disagree with your interpretation. I think the point being made was that the hearing of His voice
only occurs spiritually unto the learning/believing of His doctrine, through the Holy Spirit, and is unto all of His sheep - not only the Jew but the Gentile too. However, it does not occur through their giving of attention with learning. His sheep hear because God had made them His sheep, gave them spiritual ears to hear, and willed that they hear - not that they listen, learn and thereby become His sheep - it is all by God and nothing by the sheep. No one can make of themselves His sheep - that could only be accomplished by God alone.
