Bending the knee to idols is clearly not doing this as you are bending the knee to something other than one God, one father, one Lord and One Spirit.What if someone does all this but bends the knee to idols or denies the existence of Hell? According to your definition they're not heretics but brothers and sisters with whom we have a difference of opinion.

One who chooses heresy is a heretic, for sure.A child of God can choose heresy, but can never be charged a heretic.

Um... what? A heretic is a person who believes in or promotes heresy. It's that simple. I'm not sure your category distinction would hold up under scrutiny.
That is called Apostacy and is punishable by eternal hellfire. Solomon is an example of this.
